Yes, the front end that visitors see will be mobile responsive and work on mobile devices. In addition, it will automatically resize itself based on the screen size and resolution of the device used by the person visiting the site.
The backend/content management area is geared towards a laptop/desktop/large tablet environment and isn't conducive to being managed on mobile devices.

They may bring in designers and developers on calls with you to clarify functionality but in general they will work with you to turn your requirements into actionable tasks and then work with the team to make sure the output matches what you are expecting.

Our Maintenance and Care Plan usually includes monthly Drupal core updates, enhanced backups, etc.

There are many CMS/CMF options available. You've probably heard of WordPress, Sitecore, Joomla, Magento, Umbraco, Expression Engine, and Sitefinity.
Truthfully, each platform has overlapping functionality and unique pros and cons. Still, we've chosen to focus on Drupal and WordPress because they provide the most advantages with the least impactful cons.
We would rather be an expert on a few platforms vs. mediocre on many.
Other companies may focus on different CMS platforms, and that's great. However, if another platform best fits your needs, you should choose the one that will give you the features you need, in the way you need them, and with the best possible long-term cost of ownership.

Hosting fees vary based on what you need. Some projects can run on a virtual server, whereas others may require load balancing, database replication, etc.
